Here's a preview of our latest cheese: The Volcanic - Sottocenere Black Ash. Using ancient techniques of artisanal Italian and French goat cheese makers, we lowered the acidity of the cheese and formed the rind during the natural ageing process. The result is a superb and complex umami flavour never achieved hitherto. We are very exited to introduce it at the VegFest in Glasgow (www.vegfestscotland.com).
